The shredded wooden ear offers a nice crunchy comparison to the gentle noodles. The broth will be flavorful. After that come six bits of gyoza. They are little dumplings stuffed minced pork and veggie. The waiter meticulously mixes soy sauce, vinegar & layu (no concept what it really is) in a little bowl for me personally.
